Almond Salmon Patties

Don’t forget - breakfast is always included in your stay. Lunch is available for $15 per person and dinner is available for $25 per person.

ALMOND SALMON PATTIES

Serves 6Serves: 6

Ingredients
  • 2 Eggs Seperated
  • 1 Cup Sour Cream
  • 1 1/2 Cups Soft Bread Crumbs
  • 2 Tbs Minced Chives
  • 1/2 Tsp Seafood Seasoning
  • 1/4 Tsp Dash Salt
  • Dash Of Pepper
  • 1 Can (14 2/4 oz.) Salomon, Drained
  • 1 1/4 Cups Finely Chopped Almonds
  • 1 Tbs Vegetable Oil
Instructions

In a bowl, combine the egg yolks and sour cream. Add bread crumbs and seasonings. Stir in salmon in a mixing bowl, beat egg whites until stiff; fold into the salmon mixture.

Shape into 12 patties; coat with almonds.

Heat oil in skillet; fry patties over medium heat for 4-5 minutes on each side or until golden brown.

Serve with lemon wedges.

ALASKAN HALIBUT LASAGNA

Ingredients
  • 6 Tbs. Butter, or Margarine, Divided.
  • 1 1/2 Pds. Halibut Steaks Cut Into 1 Inch Cubes.
  • 2 Garlic Cloves, Minced.
  • 2 Tbs Minced Chives
  • 3/4 Tsp. Dried Thyme.
  • 1/3 Cup. All Purpose Flour
  • 1/2 Tsp. Salt.
  • 1 1/2 Cups Chicken Broth.
  • 1 Cup. Whipping Cream.
  • 8 oz. Lasagna Noodles, Cooked And Drained.
  • 2 Cups. Shredded Swiss Cheese.
  • Minced Fresh Parsley, Optional
Instructions

In large skillet over medium heat, melt 2 Tbs butter, Add halibut, garlic and thyme.

Cook until fish flakes easily with a fork, about 10 minutes Remove and set aside. Add remaining butter to skillet.

Stir in flour and salt until smooth: cook and stir until golden brown. Gradually add broth and cream. Bring to boil: cook and stir for 2 minutes until thickened.

In greased 13x9 X2 baking dish, layer half the noodle, halibut,white sauce and cheese. Repeat layers. Cover and bake at 350 for 20 minutes. Uncover: bake 20 minutes longer or until bubbly.

Let stand 15 minutes before serving.
Spring parsley if desired.

SALMON CHOWDER

Ingredients
  • 1 1/2 Cup Chopped Onion
  • 1 1/2 Cup Chopped Celery
  • 3/4 Cup Chopped Green Pepper
  • 3 Cloves Garlic Minced
  • 6 Tbs. Butter
  • 6 Cups Chicken Broth
  • 6 Cups Chopped Potatoes
  • 3 Cups Thinly Sliced Carrots
  • 1 1/2 Tsp. Dill
  • 1 1/2 Tsp Salt
  • 3/4 Tsp Black Pepper
  • 3 12oz Cans Evaporated Milk
  • 3 8 1/2 Oz Cans Cream Style Corn
  • 3 7 1/2 Oz. Cans Salmon, Drained
Instructions

In large sauce pan cook onion, celery, green pepper, garlic, and hot butter until tender.

Carefully stir in potatoes, carrots, dill, salt, & pepper. Bring to a boil: reduce heat.

Cover & simmer for 20m minutes or until vegetables are tender. Stir in evaporated milk, corn and salmon. Heat through.

Pour into warm bowls.

Halibut Aleyska

Cook TimeCook Time: 20-25 Mins.

Ingredients
  • 1 1/2 Cup Chopped Onion

  • 3/4 Cup Chopped Green Pepper

  • 6 Tbs. Butter

Ingredients
  • Halibut
  • 1 Cube Butter
  • Garlic Seasoned To Taste
  • 2 Or More Cups Bread Crumbs
Instructions

Cut halibut into fish stick size pieces. Melt l cube of butter and add enough granulated garlic that you can taste it. Mix well.

Put 2 cups or more of fine bread crumbs into another bowl. Roll each piece of halibut into the butter, and then into the fine bread crumbs.

Place on a cookie sheet covered with aluminum foil. Bake at 400 degrees until done, about 6-8 minutes. Dip in Tartar sauce!
